Wild Mushrooms you might find in Santa CruzMushrooms are one of those gastronomical delights that at first ( or maybe always) seem like something from another planet, yet offer great texture and subtle tastes. There is so much variety, but most are familiar with the standard white button mushrooms and the Crimini.

Of course many BBQ folks that like to have some non meat in their diet love the Portobello mushrooms for their meaty body. They have much more chew and are a great one to BBQ or put in spaghetti.

Later, Jozseph Shultz of late India Joze fame will offer cooking classes with mushrooms on January 20 at New Leaf Market on the west side. Contact them for reservations on this hands on cooking class. You can call them at call 466-9060, ext. 126.

Mushrooms are a fungi that are low in carbohydrates, are fiber rich, and are naturally low in sodium and high in potassium. They are great for choice for both weight loss and heart health and can give the meat eater somthing to sink their teeth into without expanding their waisteline. The Mushroom Council says a serving size of five to six button mushrooms is only 18 calories, has zero grams of fat, and 300 mg of potassium. By contrast tne medium portobello ( my favorite for a non meat craving) has only 22 calories and zero fat, compared to a quarter pound beef hamburger with about 244 calories and 17 grams of fat. Now if you were eating a Betty's Burger, the amount is quite a big difference as they give you a real burger and you can get that with mushrooms too !

Mushrooms such as the oyster, lions mane and shitake and chantrelles are ones you will find more oftern cooked with around here. The lions mane not as much, but you can often find this subtle and tasty one at farmers markets.

Other great areas to forage are up in Bonny Doon or the San Lorenzo Valley. You can look in state forest or if you own your own Bonny Doon real estate or Big Sur home likely find it walking about from November till about April. Once again unless you are an expert it is safe to take it to one for final identification for many. Things like Chanterelles are fairly disctictive, but mistakes have been made. Be safe and eat well.
